Chelsea Meisner, BSc Food Science
Food Scientist – Beverage Specialist
Chelsea Meisner has experience in the development, scale-up and commercial production of new food products. She has 12 years of experience in all aspects of product development, from concept to commercialization, manufacturing and quality control. Her areas of interest are beverage development, specifically, craft alcoholic beverages and brewing and Cannabis edibles.
Chelsea completed a B.Sc. in Food Science at Dalhousie University. Her past work experience includes, QC Technician/Product Development for IMO Foods and Comeaus Seafoods before moving to New Hampshire to become the Research and Development Manager for a private co-pack manufacture of vinegar, apple juice and mustard. In this role, Chelsea was involved with all aspects of manufacturing, including QC, inventory, HACCP, developing new products and scale up to commercial production. During her time in New England, Chelsea was also the Food Scientist for a Product Development Consulting Group in Rhode Island. Here, she was able to expand her product portfolio experience by working on value-added products, vegan cheese, energy drinks, coffee beverages, protein bars and dairy-free ice cream.
Once returning to Canada, Chelsea joined the team at Canada’s Smartest Kitchen in Charlottetown, P.E.I. where she continued to develop products from bench to commercial scale level. At Canada’s Smartest Kitchen, she was able to work on several alcoholic beverage projects allowing her to gain experience in that field. Before joining the Perennia team, Chelsea worked in the Cannabis Industry, developing products for the Cannabis 2.0 launch. Her primary focus was developing soft chews and setting up an entire processing line for producing the product. She successfully had the Foray, and Kolab Soft Chew Line developed for Cannabis 2.0 launch in December 2019.
When Chelsea isn’t developing food products, you will find her enjoying her favourite hobby, brewing beer. She has apprenticed at a microbrewery in New Hampshire and won a Maritime wide Homebrew Competition, which allowed her to brew her beer with Gahan Brewery to have it canned and released across the Maritimes.
