Opening winemaking possibilities in Eastern Canada with the Flash-detente technology’
SESSION DESCRIPTION:
The thermo-flash-detente process consists of heating the fruits before releasing them in a vacuum chamber to help extract the good things and separate some not-so-good ones.
It will be explained from its fundamental principles to its practical aspects.
- What is Flash detente?
- What can it be used for?
- What does it take?
- Can we use Flash beyond grapes?
- How do three years of experience in ON, QC and NB look like?
And most importantly
- How can it benefit Nova Scotia?
SPEAKER DETAILS:
As a graduate of Winemaking and Viticulture at Niagara College, David exudes a passion for cool-climate winemaking. He has gained extensive knowledge while working in different regions, both within Canada and around the globe. David has worked for renowned wineries with the likes of Le Clos Jordanne, Cedar Creek, Moet Chandon Australia and Villa Maria New Zealand. Most recently David helped to build an award-winning portfolio with Rockway Vineyards on Niagara’s Twenty Mile Bench. After 13 straight vintages, David joined Nuance in September 2019.
He’s since played a key role in supporting and developing Nuance’s presence throughout Eastern Canada.
David has been explaining, adapting, implementing and running some of the best winemaking products and technologies from Italy and France.
In particular, he’s been in charge of running Nuance’s mobile thermo – flash detente unit, opening a whole new field of possibilities for wineries of any size throughout three very different vintages.
2021 was particularly challenging in Ontario and the flash unit appeared as a relevant option to deal with difficult grapes, sometimes the only one.
With many long days and short nights, David successfully ran the machine and could treat over 600 tons of fruit.
When it comes to Flash Detente, David is the most knowledgeable winemaker in Canada with both a comprehensive understanding of the technique, its purposes, its strengths and limits combined with a solid hands-on experience.
