Join Perennia for a series of webinars focused on new entrants in the maple syrup industry in Nova Scotia. These four virtual sessions will cover various topics, including an overview of the maple industry and helpful information on getting started with production.

Introduction to Maple Syrup Production
October 23, 2023 – 7:00 PM – 8:30 PM (ATL)
This session will give an overview of the maple industry and why one should get started in maple production. The first webinar will also introduce sap flow dynamics, when to tap your trees and tree identification.
Maple Sap Collection and Storage
October 25, 2023 – 7:00 PM – 8:30 PM (ATL)
The second webinar will dive into tapping your maple trees for sustainable production and explore the different sap collection and storage methods. Sap collection methods will outline how to design and set up a maple tubing system.
Processing Maple Sap into Syrup
November 13, 2023 – 7:00 PM – 8:30 PM (ATL)
The third session focuses on the efficient processing of maple sap into syrup. The webinar will start with understanding where maple flavours come from and how cooking affects the flavour of maple syrup. The main portion of the webinar will focus on improving efficiency with reverse osmosis systems, the evaporation of maple sap into syrup and how to manage a maple evaporator.
Managing your Maple Operation
November 15, 2023 – 7:00 PM – 8:30 PM (ATL)
The final webinar in the series focuses on managing your maple operation at large. We will explore the management of a sugarbush for maple production. Other management topics will include managing your finished product, bottling your syrup, marketing your maple products and business management.

Adam Wild, Senior Extension Associate, Henry and Mildred Uihlein Director, Uihlein Maple Research Forest
Adam Wild is a specialist with the Cornell Maple Program, Director of Cornell University’s Uihlein Maple Research Forest in Lake Placid, NY, and overall maple enthusiast. As director, Adam oversees all research operations, including sugaring from a 7,000-tap commercial maple operation. Adam is also Co-Director of the Cornell Maple Program, a state-wide outreach effort with region-wide impacts oriented toward supporting and sustaining growth within the maple industry. Additionally, Adam co-hosts the maple industry podcast “Sweet Talk: All things Maple,” regularly writes articles for industry news outlets, and teaches an online maple course through the Cornell Small Farms program.
Before joining the Cornell Maple Program, Adam was an Assistant Professor in the Department of Plant Science at SUNY Cobleskill, teaching courses in dendrology, botany, soil science and maple production. Adam lives in picturesque Lake Placid with his wife, where he enjoys exploring all the outdoor activities the Adirondacks offer, including skiing, biking, hiking and paddling.
